Ingredients:
1 1/2-2 c frozen corn kernels, thawed (fresh corn works as well)
2 jalapeños seeds were removed and sliced lengthwise into strips
2 cloves garlic, minced
1 lime, sliced
3 1/2 tablespoons vegetable oil divided
3 boneless, skinless chicken breasts, cut in half and pounded to be 1/2-inch thick
3 Tbsp lime juice (juice of 2-3 limes)
1/2 c water
1 teaspoon chili powder
1 teaspoon dried oregano
1/4 teaspoon ancho chile powder
1-1 1/2 c shredded Mexican blend cheese (or any cheese you prefer)
1/2 teaspoon dried minced onion
3/4 teaspoon kosher salt
1/2 c all-purpose flour
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
extra lime wedges, for garnish
minced fresh cilantro, for garnish
Directions:
1. Add oregano, chicken, black pepper, kosher salt, ancho Chile powder, ground cumin, chili powder, and dried minced onion into a large bowl. Toss until the chicken pieces are well coated.
2. In a mixing bowl, add flour.
3. Add each chicken piece into the flour, then toss until well coated. Shake off any excess.
4. Place a large oven-proof skillet on the stove and turn the heat to medium-high.
5. Add the slices of lime and sear for a minute on each side. Transfer onto a clean plate.
6. Add 2 1/2 tablespoons of vegetable oil into the same skillet and allow it to become hot.
7. Add the chicken pieces in batches, then cook each side for about 3 minutes or until they turn golden brown. Transfer onto a clean plate. Repeat the process with the rest of the chicken.
8. Place the rack in the upper part of the oven. Set the broiler to high.
9. In the same skillet and 1 tbsp oil and allow it to become hot.
10. Add the garlic, corn kernels, and jalapeno. Sauté for 3 minutes or until done.
11. Put the chicken pieces back into the skillet together with water and lime juice. Stir until well mixed. Cook for 2 more minutes.
12. Sprinkle shredded cheese on top.
13. Place the skillet inside the oven and broil for about 3 minutes or until the cheese has melted completely.
14. Remove from the oven, then sprinkle minced cilantro on top to garnish.
15. Serve with the charred lime. Enjoy!
