Simple and delicious! This Yummy Carrot Cake is composed of amazing flavors. I’m sure your entire family is going to love it! It can yield up to 18 servings so everybody gets a piece! In just 35 minutes, you will surely enjoy this spectacular cake! Just follow these simple ingredients and easy steps, and you are good to go!
Ingredients:
2 Eggs, slightly beaten
2 1/2 c shredded/grated carrots
1/4 teaspoon baking soda
3/4 c brown sugar, packed
1/4 c white sugar
1 1/2 c all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla
1 1/4 teaspoon cinnamon
2 c Cream Cheese Frosting
1/2 c canola oil or vegetable oil
A pinch of nutmeg is optional- but I think is necessary
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to a 9×13-inch baking pan.
3. Add baking soda, nutmeg, cinnamon, flour, and baking powder into a mixing bowl. Whisk until well mixed.
4. In a separate mixing bowl, add white sugar, vanilla, eggs, brown sugar, and grated carrots. Stir until well mixed.
5. Transfer the wet ingredients into the bowl with the dry ingredients, then stir until just combined.
6. Transfer the batter to the prepared baking pan and spread it evenly.
7. Place it inside the preheated oven and bake for about 20 to 25 minutes or until a toothpick comes out clean after inserting it in the middle.
8. Remove the cake from the oven and allow it to rest at room temperature.
9. Pour the cream cheese frosting over the cooled cake and spread it evenly.
10. Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge.
