This amazing Strawberry Pound Cake is what you just might need today! It will only take you about an hour to prepare and bake this cake. A must-try recipe that you will surely love. Ingredients:
1/2 c vegetable oil
2 tsp baking powder
3 large Eggs
1 c diced strawberries about 1 1/4 cup whole
1 c plain Greek yoghurt
1 c sugar
1/2 tsp salt
1 1/2 tsp almond extract
1 1/2 c all-purpose flour
Glaze:
2 c powdered sugar
1/2 c smashed strawberries about 1 cup whole
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to an 8-inch loaf pan.
3. Add salt, flour, and baking powder into a mixing bowl. Whisk until well combined.
4. In another bowl, add eggs, Greek yogurt, oil, extract, and sugar. Whisk until well mixed.
5. Transfer the flour mixture into the bowl with the egg mixture, then whisk until well blended.
6. Add the strawberries, then stir until well incorporated.
7. Transfer the batter into the prepared loaf pan and spread it evenly.
8. Place it inside the preheated oven and bake for 50 minutes or until a toothpick comes out clean after inserting it in the middle.
9. Remove the cake from the oven and allow it to cool completely at room temperature.
10. Meanwhile, add powdered sugar and smashed strawberries into a mixing bowl. Stir until well blended.
11. Pour the glaze over the cooled cake and spread it evenly.
12. Slice the cake into even cuts.
13. Serve and enjoy!
