This cake recipe has always been a part of my family for generations! My grandma taught me this recipe. Now, allow me to share it with you as well! This will be the best cake you will ever have; I’m telling you! Try it now and prepare to fall in love. Enjoy!
Ingredients:
Cake:
1 c brown sugar
1 c pecans, chopped
2 large Eggs
1 (20 ounces) can of crushed pineapples, with juice
1 tsp baking soda
1 1/2 c sugar
1/2 tsp salt
2 c all-purpose flour
Icing:
1/2 c (1 stick) unsalted butter
1 tsp vanilla
1/2 c sugar
1 c evaporated milk
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to a 9×13-inch baking dish.
3. Add flour, baking soda, salt, and sugar into a large mixing bowl. Whisk until well incorporated.
4. Add pineapple and eggs, then whisk until well blended.
5. Transfer the batter to the prepared pan and spread it evenly.
6. Add pecans and brown sugar over the batter.
7. Place it inside the preheated oven and bake for about 40 to 45 minutes or until a toothpick comes out clean after inserting it in the middle.
8. Remove the cake from the oven and allow it to cool for a few minutes.
9. Meanwhile, place a saucepan on the stove and turn the heat to medium-high.
10. Add butter, evaporated milk, and sugar. Stir until the butter has melted completely and is well blended with the milk. Allow the mixture to boil. Remove from the heat right away.
11. Add vanilla extract and stir until well blended.
12. Pour the mixture on top of the cooled cake and spread it evenly.
13. Let the cake rest for a few minutes at room temperature.
14. Slice the cake into even servings.
