I can’t count how many times I made this Creamy Cornbread Casserole! Since the first time I tried this, I got addicted to it! This recipe is simple! All you need are these 6 basic ingredients that I’m pretty sure you already have right now! You can forget about the cornbread you had in a Mexican restaurant because I promise you that this one is way better!
Leftovers are not a problem because I’m telling you, there won’t be any! By the way, you can serve this any time of the day and it would still be awesome! Try this recipe now, and don’t waste another moment not knowing how delicious this Creamy Cornbread Casserole is. Enjoy!
Ingredients:
8 oz. Cheddar cheese, shredded
1 c sour cream
1 (14.75 oz) can of cream-style corn
2 Eggs
1 (8 oz) package of dry cornbread mix
1 (15 oz) can whole kernel corn, drained and 1/2 liquid reserved
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Apply cooking spray to the inside of a 9×13-inch baking pan.
3. Add sour cream, reserved liquid, eggs, cornbread, and corn into a large mixing bowl. Stir everything until well incorporated.
4. Transfer the batter to the prepared baking pan and spread it evenly.
5. Sprinkle the shredded cheddar cheese on top of the batter.
6. Place the pan inside the preheated oven and bake the casserole for about 30 minutes or until the top turns golden brown.
7. Remove the casserole from the oven and allow it to rest for a few minutes at room temperature.
8. Serve and enjoy!
