Ingredients:
3 Eggs
1 c dried cranberries
1 c pecans, chopped
1 ¾ c granulated sugar or cane sugar
2 tsp vanilla extract
¾ c unsalted butter at room temperature softened
1 Fuji apple, cored, peeled, and cubed
1 c buttermilk
2 tsp baking powder
powdered sugar for decorating
2 ½ c all-purpose flour
¼ tsp salt
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Add salt, baking powder, and 2 1/2 cups of flour into a mixing bowl. Whisk until well incorporated.
3. In another bowl, add sugar and softened butter. Beat until well blended and smooth.
4. Add 2 tsp of vanilla extract and 3 eggs into the bowl with the butter-sugar mixture. Beat until well combined.
5. Transfer the flour mixture gradually into the bowl with the butter mixture, then beat continuously until well incorporated.
6. Add 1/3 cup of buttermilk, then beat again until well mixed.
7. Add 1/3 of the flour mixture, then beat again. Repeat the process.
8. Add the chopped apple, chopped pecans, and dried cranberries. Stir until just mixed.
9. Apply cooking spray and sprinkle flour onto a Bundt cake pan.
10. Transfer the batter to the prepared pan and spread it evenly.
11. Place it inside the preheated oven and bake for an hour or until done.
12. Remove the cake from the oven and allow it to cool for at least 40 minutes at room temperature.
13. Sprinkle powdered sugar over the cake. Enjoy!
