This homemade cake is my definition of love and perfection! My grandma used to make this all the time. I am so grateful to her for this because now, I get to share it with you! You will be amazed at how easy it is to make such a delicious cake at home! Surprise everyone with this cake. Enjoy!
Ingredients:
Cake:
2 c all-purpose flour
1 tsp baking soda
1 c brown sugar
1 (20 ounces) can of crushed pineapples, with juice
2 large Eggs
1 c pecans, chopped
1/2 tsp salt
1 1/2 c sugar
Icing:
1 tsp vanilla
1/2 c sugar
1/2 c (1 stick) unsalted butter
1 c evaporated milk
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to the inside of a 9×13-inch baking dish.
3. Add sugar, flour, salt, and baking soda into a large mixing bowl. Whisk until well combined.
4. Add pineapple and eggs into the same bowl with the flour mixture, then whisk until well incorporated.
5. Add the batter to the prepared pan and spread it evenly.
6. Scatter pecans and brown sugar over the batter.
7. Place the baking dish inside the preheated oven and bake the batter for about 40 to 45 minutes or until a toothpick comes out clean after inserting it in the middle.
8. Remove the cake from the oven and let it rest for a few minutes at room temperature.
9. Place a saucepan on the stove and turn the heat to medium-high.
10. Add evaporated milk, sugar, and butter. Stir until well blended and allow the mixture to boil. Remove from the stove.
11. Add vanilla extract and stir until well blended.
12. Pour the icing on top of the cooled cake and spread it evenly.
13. Let the cake rest for a few more minutes until the icing has set completely. Slice the cake into even pieces.
14. Serve and enjoy!
