Serve these Apple Hand Pies warm with your favorite cup of coffee! You are so in for a treat! This recipe can yield up to 8 servings and is ready in less than an hour!
Ingredients:
Pie Crust:
Extra flour for rolling
1 ½ c all-purpose flour (200 g)
¼ rounded teaspoon kosher salt (2 g)
3 tbsp cold water
2 rounded tablespoons granulated sugar (31 g)
5-oz unsalted butter (cold & cubed, 141 g)
Apple Pie Filling:
1 tbsp lemon juice (15 g)
1 tbsp water
1 tbsp unsalted butter (½ oz, 14 g)
¼ c brown sugar (46 g, lightly packed)
A pinch of kosher salt
2 apples (263 g peeled & diced)
1 tbsp cornstarch (7 g)
½ tsp apple pie spice
Egg Wash:
¼ tsp apple pie spice (optional)
1 tbsp turbinado sugar
1 tbsp of milk
1 large Egg
Directions:
For the Apple Pie Filling:
1. In a mixing bowl, add lemon juice, diced apple, brown sugar, and apple pie spice. Whisk until well incorporated.
2. Place a saucepan on the stove and turn the heat to medium.
3. Add butter and allow it to melt.
4. Add the apple mixture into the hot pan, then stir and cook for about 5 minutes or until the apples are soft.
5. In a mixing bowl, combine cornstarch and water. Pour it into the pan and stir until well blended. Simmer for a few minutes until thick.
6. Remove the pan from the heat and allow the mixture to cool at room temperature.
For the Pie Dough:
1. In a food processor, add salt, flour, and sugar. Pulse until well incorporated.
2. Add butter into the food processor, then pulse again until well blended.
3. Add water gradually into the food processor and pulse every addition until a dough forms.
4. Sprinkle flour onto a flat surface, then place the dough over it. Wrap the dough with plastic, then place it inside the fridge to chill for an hour.
5. Remove the dough from the fridge, then unroll it into a 1/4-inch-thick piece and slice it into 8 even circles. I used a cookie cutter for this.
6. Line parchment paper onto a baking sheet.
7. Add the dough slices onto the prepared baking sheet and arrange them in a single layer. Refrigerate for a few minutes.
To Assemble:
1. Add 1 tbsp of milk and egg to a mixing bowl, then whisk until well blended.
2. Roll each dough, then brush with the egg wash on the bottom part.
3. Top each dough with 1 tbsp of the apple pie filling.
4. Fold the top, then seal the sides of the dough by pressing it with a fork. Repeat the process to the rest of the dough and apple filling. Arrange the pies onto the prepared baking sheet.
5. Place the baking sheet inside the freezer to chill the pies for 20 minutes
6. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
7. Brush each pie with the egg wash one more time.
8. Place the pies inside the preheated oven and bake for 20 minutes or until golden brown.
9. Serve and enjoy!
