Chicken smothered in a delicious sweet and sour sauce! This recipe is surely a must-try! Serve this dish over rice with the sauce, and you have yourself a meal to remember! It’s ready in just 1 hour and 20 minutes. Enjoy!
Ingredients:
¼ c vegetable oil
2 large Eggs, beaten
1 lb. boneless, skinless chicken breasts, cut into 1-inch chunks
½ c cornstarch
Kosher salt and freshly ground black pepper, to taste
FOR THE SWEET AND SOUR SAUCE
¼ c ketchup
1 tbsp soy sauce
½ tsp garlic powder
¾ c sugar
½ c apple cider vinegar
Directions:
1. Prepare the oven and preheat to 162 degrees C or 325 degrees F.
2. Apply cooking spray to a baking dish.
3. Add soy sauce, garlic powder, vinegar, ketchup, and sugar into a mixing bowl. Whisk until well blended.
4. Sprinkle salt, pepper, and cornstarch over the chicken. Toss until well coated. Beat the eggs into a mixing bowl.
5. Coat each chicken with the beaten eggs.
6. Place a large pan on the stove and turn the heat to medium.
7. Add vegetable oil and allow it to become hot.
8. Add the chicken into the hot pan, then cook each side for about 2 minutes or until they turn golden brown.
9. Remove the chicken from the pan and move them onto a clean plate lined with paper towels to drain excess oil.
10. Transfer the chicken into the prepared baking dish.
11. Pour the sauce over the chicken. Make sure to cover them entirely.
12. Place the baking dish inside the preheated oven and bake the chicken for about 55 minutes or until the texture becomes thick. Make sure to flip them every 15 minutes.
13. Remove from the oven.
14. Serve right away. Enjoy!
