These Cowboy Cookies have always been a part of my life since I was little. My grandma used to make these all the time! Now, allow me to share this recipe with you as well! You and your loved ones are going to enjoy these heavenly treats! This recipe can yield up to 36 servings!
Ingredients:
3 Eggs
1 tbsp vanilla extract
3 c all-purpose flour
1 tbsp baking powder
1 1/2 c light brown sugar, packed
3 c semisweet chocolate chips
1 1/2 c (3 sticks) butter, room temperature
1 1/2 c granulated sugar
2 c sweetened flake coconut
2 c chopped pecans
3 c old-fashioned rolled oats
1 tbsp baking soda
1 tsp salt
1 tbsp ground cinnamon
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Add cinnamon, salt, baking soda, flour, and baking powder into a mixing bowl. Whisk everything until well incorporated.
3. In another mixing bowl, add butter and beat until smooth.
4. Add the sugars slowly and beat every addition until well blended.
5. Add eggs gradually and beat every addition until well blended.
6. Add vanilla and stir until well incorporated.
7. Transfer the flour mixture and beat until well incorporated.
8. Add pecans, oats, chocolate chips, and coconut. Stir until just mixed.
9. Spoon the dough and drop each onto a baking sheet. Make sure to leave a small space between each dough.
10. Place the baking sheet inside the preheated oven and bake the cookies for about 15 to 17 minutes or until done. Make sure to rotate the baking sheet halfway through the baking time to evenly cook all sides.
11. Remove from the oven and allow the cookies to cool at room temperature.
12. Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge or at room temperature.
