These Buckeye Brownie Cookies are loaded with sweet things that will surely satisfy your sweet tooth! They may seem like a lot of sweets, but I promise you that they taste perfectly balanced! Invite your friends over because this recipe can yield up to 24 servings! In just about 30 minutes, these heavenly treats are ready to be devoured! What are you waiting for? Ingredients:
1 Egg
1 c creamy peanut butter
1/4 c butter, melted
4 oz. semi-sweet chocolate chips
1 box fudge brownie mix (19.5 oz. or family size)
1 c powdered sugar
4 oz. cream cheese, softened
2 tsp vanilla extract
1 tsp cornstarch
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Add the brownie mix, cornstarch, vanilla extract, cream cheese, egg, and melted butter into a mixing bowl. Beat until well blended and smooth.
3. Scoop the mixture onto a cookie sheet. Make sure to leave a space between each cookie dough.
4. Place the baking sheet inside the preheated oven and bake the cookie dough for about 12 minutes or until done.
5. In a mixing bowl, add peanut butter and powdered sugar. Stir until well blended. Use your clean hands to shape the mixture into 1-inch balls.
6. Remove the cookies from the oven, then top each with the peanut butter balls and press it in the middle.
7. Allow the cookies to cool at room temperature.
8. Meanwhile, add chocolate into a heat-proof bowl and place it in the microwave. Heat for a few minutes until melted completely.
9. Top each cookie with melted chocolate. Leave them at room temperature for a few more minutes.
10. Serve and enjoy!
Note:
Place any leftovers in an airtight container. You can leave them at room temperature or in the fridge.
