Ingredients:
BOTTOM LAYER:
1/2 c + 1 tbsp brown sugar (lightly packed) (112.50 grams)
23 slices of peaches (3 or 4 peaches or 1 small can drain)
1/4 c butter (softened) (56 grams)
CAKE LAYER:
1/4 tsp almond flavoring
1 1/2 tsp baking powder
1/4 c + 2 tbsp milk (80 grams)
1 Egg
1/2 c white sugar (100 grams)
1 cup of cake flour (115 grams)
1/4 c butter (56 grams)
1/4 tsp salt
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to an 8-inch cake pan.
For the Bottom Layer:
1. Add the softened butter to the bottom of the prepared pan together with the brown sugar. Stir until well blended and spread the mixture evenly.
2. Lay the peaches over the butter mixture and gently press them.
For the Cake Layer:
1. Add salt, baking powder, and flour into a mixing bowl. Whisk until well incorporated.
2. In a separate mixing bowl, add butter, almond flavoring, sugar, and egg. Beat until well blended and smooth.
3. Transfer the dry ingredients into the bowl with the wet ingredients together with milk. Beat until well blended.
4. Add the mixture on top of the peaches and spread it evenly.
5. Place it inside the preheated oven and bake for about 45 minutes or until done.
6. Remove from the oven and let the cake cool at room temperature.
7. Top each serving with vanilla ice cream.
8. Serve and enjoy!
Notes:
For the Cake Flour:
1. Add 1 cup of all-purpose flour into a bowl. Remove about 2 tablespoons.
2. Add 2 tbsp of cornstarch in exchange for the flour, then whisk until well incorporated.
