These Peach Hand Pies are amazing! I recently learned this recipe, and I am so glad that I gave it a try because I never would have tasted perfection! This recipe can yield up to 16 pies so invite your friends and loved ones over. Enjoy!
Ingredients:
FOR THE PIE CRUST:
2 & 1/2 c (300g) all-purpose flour
2 tsp granulated sugar
1/2 tsp salt
8 oz. (226g) cream cheese, softened and cut into 1/2-inch cubes
1 c (226g) unsalted butter, cold and cut into 1/2-inch cubes
FOR THE FILLING:
1/2 tsp cinnamon
1/4 tsp almond extract
A pinch of salt
1/4 c (50g) brown sugar
1 & 1/2 c (255g) chopped peaches
FOR ASSEMBLY:
sanding sugar, optional
1 large Egg
1 tbsp water
Directions:
For the Pie Crust:
1. In a food processor, add sugar, salt, cream cheese, butter, and flour. Pulse until it forms into a dough.
2. Slice the dough into two, then shape each into a disc and wrap with plastic. Place them inside the fridge to chill for about 30 minutes.
3. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
4. Line parchment paper onto baking sheets.
5. Sprinkle flour onto a flat surface, then place the dough on it. Roll it out to about 1/8-inch thick. Slice the dough into circles with a 4-inch round cutter.
For the Filling:
1. In a mixing bowl, add salt, peaches, cinnamon, brown sugar, and almond extract. Whisk until well incorporated.
2. Add 1 1/2 tbsp of the filling over each pie crust and spread it evenly. Make sure to leave a space to the sides.
To Assemble the Pie:
1. Make a half circle of the pie by folding it and pressing the sides together. Crimp the sides with a fork to seal them.
2. Make a tiny cut over each pie.
3. In a mixing bowl, add water and egg. Whisk until well blended.
4. Brush each pie with the egg wash and sprinkle sanding sugar on top.
5. Place the pies in the preheated oven and bake for about 20 to 25 minutes or until they turn golden brown.
6. Remove from the oven and allow the pies to rest for about 10 minutes on a wire rack.
7. Serve and enjoy!
