You will surely love the sweet taste of these Peach Jacks! I like to eat then with my favorite cup of coffee. You need to give this recipe a try, I’m telling you! These heavenly treats are simply the best! I highly suggest eating them while still hot. Just do it and thank me later. Enjoy!
Ingredients:
1 c sugar
1/2 c shortening
1/2 c milk
1 1/2–2 c water Add water if it cooks out before the peaches are soft
Extra flour for dusting cutting board and rolling pin
1 tsp salt
6 oz. dried peaches
1/2–1 c lard for frying
2 c all-purpose flour
Directions:
Filling: (Make ahead)
1. Place a saucepan on the stove, then add the peaches and water. Turn the heat to medium and cook the peaches for about 45 minutes to an hour. Add water if the peaches stick to the pan. Place it in the fridge overnight.
For the Dough:
1. In a mixing bowl, add salt and flour. Whisk until well mixed.
2. Add the shortening and milk, then stir until incorporated. Divide the mixture into 8 parts.
3. Roll each dough to about a 6-inch round shape.
To Cook:
1. Add 2 tbsp of the cooked peaches to the middle of the prepared dough, then shape it into a half circle by folding the sides.
2. Use a fork to crimp the sides and remove any excess dough.
3. Place a frying pan on the stove and turn the heat to medium.
4. Add lard and allow it to melt.
5. Add the jacks into the hot pan, then cook for a few minutes until they turn golden brown.
6. Transfer the jacks onto a clean plate lined with paper towels to drain any excess oil.
7. Serve and enjoy!
