This Ritz Cracker Pie is my ultimate comfort food! The combination of all the ingredients complements very well with each other to make such a delicious pie! Ready in no time, this is pie is so addicting that you would want to eat it pretty much all the time. Enjoy!
Ingredients:
3 large Eggs
Generous pinch of salt
150 grams of demerara sugar
150 grams butter
250 grams Ritz crackers
150 grams of soft brown sugar
75 grams of demerara sugar
75 grams melted butter
2 tablespoons of skimmed milk powder
50 grams of desiccated coconut
150 grams double cream
Directions:
1. Prepare the oven and preheat to 350 degrees F or 175 degrees C.
2. Apply cooking spray to a 20-cm springform cake tin.
3. To make the base, in a food processor, add 1/2 of the Ritz crackers. Pulse a few times until they turn into crumbs.
4. Add coconut, sugar, and melted butter into the food processor with the crumbs. Pulse a few times again until well incorporated.
5. Transfer the mixture into the prepared cake tin and spread it evenly. Set aside.
6. Place a saucepan on the stove and turn the heat to medium.
7. Add milk powder, butter, cream, and sugars into the hot pan. Stir until well blended, then allow the mixture to boil. Stir occasionally and season with a bit of salt.
8. Remove the pan from the stove, then let the mixture cool for a few minutes at room temperature.
9. Crack the eggs in, then beat every addition until well blended. Strain and set aside.
10. Add the remaining Ritz crackers over and arrange them around the batter. Pour the custard on top.
11. Place the pie onto a baking sheet. Place it in the preheated oven and bake for about 45 minutes or until golden brown.
12. Remove from the oven and let the pie cool completely.
13. Slice into even pieces.
14. Serve and enjoy!
