These Caramel Cornflake Crunch Brownies never fail to make my day! I’ve been making this recipe for a couple of years now. Allow me to share it with you as well! The caramel cornflake is the winner for me. You will fall in love with it after one bite. Try this recipe now!
Ingredients:
Brownies:
265 grams of golden caster sugar
175 grams of unsalted butter
1/4 teaspoon salt
200 grams of dark chocolate
3 large Eggs
200 grams of plain flour
Caramel:
1/2 teaspoon salt
100 grams of unsalted butter
125 grams cornflakes
1 teaspoon vanilla
300 grams caster sugar
200 ml double cream
Directions:
Brownies:
1. Apply cooking spray to an 8×8-inch square tin, then lay parchment paper in it.
2. Prepare the oven and preheat to 400 degrees F or 200 degrees C.
3. Chop the chocolate finely, then place the pieces into a heat-proof bowl.
4. Place the bowl in the microwave and heat for a few minutes until the chocolate pieces are melted completely.
5. Add the melted butter, salt, flour, and sugar into the bowl with the melted chocolate, then stir until well blended.
6. Add the eggs and beat until well incorporated.
7. Transfer the batter to the prepared baking tin and spread it evenly.
8. Place it inside the preheated oven and bake for about 35 minutes or until a toothpick comes out clean after inserting it in the middle.
9. Remove from the oven and let it rest completely at room temperature.
Caramel:
1. Place a heavy-bottomed saucepan on the stove and turn the heat to medium-high.
2. Add the sugar, then stir and cook for a few minutes until caramelized.
3. Remove the pan from the stove, then add vanilla, butter, salt, and cream. Stir everything until well blended.
4. Put the pan back on the stove and turn the heat to low. Cook the caramel for about 10 minutes.
5. Remove the pan from the heat, then add the cornflakes and stir until well mixed.
6. Spread the mixture on top of the brownies. Make sure to coat them well. Let the brownies cool completely at room temperature. Slice into pieces.
7. Serve and enjoy!
Notes:
Leftovers can last up to 4 to 5 days in the fridge. Make sure to place them in an airtight container.
