This Sicilian Whole Lemon Cake is simply amazing! I like eating this with my favorite cup of coffee any time of the day! This recipe is easy to prepare. All you need are these ingredients and about one and a half hours of your time. Try it now! I promise you that it is worth it. Enjoy!
Ingredients:
Cake
1/3 cup (100g) butter, softened
1/3 cup (100g) plain Greek yoghurt
3 Eggs
(If using baking powder, add 1/2 tsp vanilla extract)
2 1/2 teaspoons baking powder (or 1 packet Italian Pane Degli Angeli vanilla baking powder)
1 1/2 cup (300g) sugar
1 3/4 cup (275g) all-purpose flour
1 large organic Meyer lemon, about (300g), washed and cut into pieces (with the rind, but remove the seeds)
Glaze
a little less than 3 tablespoons (35 grams) of sugar
1-ounce water
1 ounce of lemon juice
Directions:
For the Whole Lemon Cake:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to an 8-inch springform pan.
3. In a large mixing bowl, add eggs and sugar. Beat until well blended.
4. In another bowl, add sift together baking powder and flour. Transfer the mixture into the bowl with the egg mixture and whisk until well incorporated.
5. Add softened butter, vanilla, and yoghurt, then whisk again until well combined.
6. Add the whole lemon into the food processor, then pulse until pureed.
7. Transfer the pureed lemon into the bowl with the cake mixture, then stir until well blended.
8. Empty the bowl into the prepared pan and spread it evenly.
9. Place the pan in the preheated oven and bake the batter for about an hour or until a toothpick comes out clean after inserting it in the middle.
10. Remove the cake from the oven and allow it to rest for at least 15 minutes at room temperature.
For the Lemon Glaze:
1. Add water, lemon juice, and sugar into a saucepan over low heat. Stir until well blended. Make sure to completely dissolve the sugar. Remove from the heat and allow it to cool.
2. Brush the cake with the glaze.
3. Serve and enjoy!
