If you are a huge fan of Mexican foods like me, then this recipe is one to try! The combination of all the flavors complements very well with each other. This will be the perfect dinner with your family tonight. Enjoy!
Ingredients:
4 green onions, sliced (about ¾ c)
2 c shredded cheddar cheese divided
½ tsp salt
2 garlic cloves, minced
2 10 oz. cans of red enchilada sauce
¼ c cilantro, chopped
1 15 oz. can of refried beans
1 pound of ground beef
1 small onion, chopped (about 1 c)
1 tbsp oil
6-8 burrito-sized flour tortillas
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a skillet on the stove and turn the heat to medium. Add oil and allow it to become hot.
Add the onion, then saute for a few minutes until soft.
Add the garlic, then sauté for a minute or until aromatic.
Add the beef, then cook for a few minutes until brown. Discard any excess grease.
Remove the skillet from the stove, then add about 3 tbsp of cilantro and 5 ounces of enchilada sauce. Stir everything until well blended.
Place the refried beans in the microwave and heat for about a minute.
Add about 5 ounces of the enchilada sauce into a 9×13-inch baking pan and spread it evenly.
Add the burritos into the prepared pan and arrange them in a single layer.
Fill each burrito with the beef mixture, refried beans, green onions, and 1 cup of cheese.
Fold the ends of each burrito and seal. Repeat the process with the rest of the ingredients.
Add the rest of the cheese and enchilada sauce over the Enchiritos.
Cover them with foil, then place them in the preheated oven and bake for about 20 minutes.
Remove the foil cover, then bake them for 5 more minutes.
Remove from the oven and allow them to rest for about 10 minutes at room temperature.
Sprinkle cilantro and green onions over each serving.
Serve and enjoy!
