Ingredients:
1/2 c panko or homemade breadcrumbs
1 tsp minced rosemary
1/4 c minced shallots
1 boneless pork loin (about 3 to 4 lbs.)
Sea salt and freshly ground pepper
1/3 c dried cranberries
2 tbsp pure maple syrup
1/3 c chopped walnuts, toasted
1 c peeled, chopped tart green apples
1/2 c chicken stock
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Place the pork onto a flat surface, then use a sharp knife to slice it from the middle. It should look like an open book.
Cover the pork with plastic, then use a meat mallet to gently pound it. Sprinkle salt and pepper on top, then rub it until well-coated.
For the Filling:
In a mixing bowl, add the stock and Panko crumbs. Stir until well incorporated.
Add walnuts, apples, rosemary, shallots, maple syrup, and cranberries. Stir everything until well incorporated.
Spoon the filling on top of the pork and spread it evenly.
Roll the pork, then use kitchen strings to tie and secure it.
Place it in the preheated oven and roast for about 15 minutes or until done.
Remove from the oven and cover it with foil to keep warm. Let it sit at room temperature for at least 10 minutes to incorporate all the flavors. Slice it into small pieces.

Toast the walnuts for about 7 to 10 minutes at 350 degrees F.
