I love Jambalaya because it is already a complete meal and you won’t be needing anything else! In less than an hour, you will surely enjoy this amazing food!
Ingredients:
6 cloves garlic, chopped
½ lb andouille sausage, chopped – if you want to get meaty, add a whole pound!
2 tbsp olive oil
3-4 tomatoes, chopped – about 1 lb.
2 stalks of celery, chopped
3 tsp spicy Cajun seasoning
½ lb. shrimp, peeled and deveined
2-3 jalapeno peppers, chopped
1 lb. boneless, skinless chicken breast, chopped
1 c white rice I used a long grain – I only used 1 c here, but you can fit 2 if you want the meal to feed more. If you do, add more stock
2 small onions, chopped
1 tsp olive oil
2-3 Serrano peppers chopped
1 c chicken stock
1 tsp dried basil
Your favorite hot sauce for serving
Salt and pepper to taste
Chopped parsley for garnish
1 red bell pepper, chopped
8 oz. tomato sauce
1 tsp dried oregano I love Mexican oregano
Directions:
Place a large pan on the stove and turn the heat to medium. Add oil and allow it to become hot.
Add the celery, peppers, and onions. Sauté for about 6 minutes or until the veggies are soft.
Add the garlic, then sauté for a minute or until aromatic.
Add the andouille sausage and chicken, then stir and cook for about 5 minutes or until brown.
Add the tomatoes, then stir and cook for a few more minutes.
Add tomato sauce, chicken stock, pepper, basil, oregano, Cajun seasoning, and salt. Stir everything until well blended.
Stir in the white rice and allow the mixture to boil.
Turn the heat down to low, then cover the pan with the lid. Simmer for 30 minutes or until the rice is soft.
Place another pan on the stove and turn the heat to medium. Add oil and allow it to become hot.
Sprinkle Cajun seasoning, pepper, and salt over the shrimp. Toss until well coated.
Put the shrimp into the hot pan, then cook for a few minutes until it turns pink.
Transfer the shrimp into the pan with the Jambalaya, then stir until well incorporated.
Remove from the oven and sprinkle freshly chopped parsley.
Serve and enjoy!
