Easy, delicious, and out of this world! These Coconut Almond Cookies only need four basic ingredients. Yes, you read it right! You don’t need anything else other than these 4 things, mainly chocolate chips, coconut milk, flake coconut, and salted almonds! This is a must-try recipe that you will surely enjoy preparing! Ready in less than 30 minutes, these heavenly treats are simply the best! Invite your friends over, and surprise them with these awesome cookies. Enjoy!
Ingredients:
1/2 c dark chocolate chips, mini or regular
3/4 c sweetened condensed coconut milk
2 c unsweetened flake coconut
3 tbsp chopped salted almond
Directions:
Prepare the oven and preheat to 325 degrees F.
Line parchment paper onto a large baking sheet.
Make sure that the sweetened condensed coconut milk is completely dissolved. (You can dissolve it in a small saucepan over low heat for a few minutes.)
Add the chopped almonds, liquid-sweetened condensed coconut milk, coconut flakes, and chocolate chips into a mixing bowl. Everything until well blended.
Scoop the mixture and drop each onto the prepared baking sheet. Make sure to leave a small space between each dough.
Press each to flatten out.
Place them in the preheated oven and bake for about 12 to 14 minutes or until they turn golden brown.
Remove from the oven and allow the cookies to completely cool at room temperature.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge. They can last up to one week.
Feel free to use dairy-free chocolate chips for this recipe.
Feel free to use mini chocolate chips for this recipe if you prefer.
It is important to melt the condensed coconut milk first before mixing it with the rest of the ingredients.
