This Peach Upside Down Cake is very refreshing because of the peaches! Top each serving with a scoop of ice cream, and you have yourself the perfect dessert. Enjoy!
Ingredients:
BOTTOM LAYER:
23 slices of peaches (3 or 4 peaches or 1 small can drain)
1/2 c + 1 tbsp brown sugar (lightly packed) (112.50 grams)
1/4 c butter (softened) (56 grams)
CAKE LAYER:
1/2 c white sugar (100 grams)
1/4 c butter (56 grams)
1/4 tsp salt
1 cup of cake flour (115 grams)
1/4 c + 2 tbsp milk (80 grams)
1 Egg
1/4 tsp almond flavoring
1 1/2 tsp baking powder
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to an 8-inch cake pan.
For the Bottom Layer:
Add the softened butter to the bottom of the prepared pan together with the brown sugar. Stir until well blended and spread the mixture evenly.
Press the peaches over the butter mixture.
For the Cake Layer:
Add baking powder, salt, and flour into a mixing bowl. Whisk until well combined.
In another mixing bowl, add sugar, butter, almond flavoring, and egg. Beat until well incorporated.
Transfer the dry ingredients into the bowl with the wet ingredients. Pour in the milk, then beat everything until well incorporated.
Add the mixture on top of the peaches and spread it evenly. Make sure to cover the top.
Place it in the preheated oven and bake for about 45 minutes or until done.
Remove from the oven and let the cake cool for at least 5 minutes at room temperature.
Top each serving with vanilla ice cream.
Serve and enjoy!
For the Cake Flour:
Add 1 cup of all-purpose flour into a bowl. Remove about 2 tablespoons and replace them with 2 tbsp of cornstarch. Whisk until well combined. The ratio should be about 70 percent flour and 30 percent cornstarch.
