I am so excited to share this recipe with you today! These Peach Jacks will be your new favorites, I’m telling you! From the peaches to the crust, everything about this pie is amazing! A must-try recipe indeed. Enjoy!
Ingredients:
1/2–1 c lard for frying
1 tsp salt
1 1/2–2 c water Add water if it cooks out before the peaches are soft
6 oz. dried peaches
1 c sugar
1/2 c shortening
1/2 c milk
Extra flour for dusting cutting board and rolling pin
2 c all-purpose flour
Directions:
Filling:
Place a saucepan on the stove, then add the peaches and water.
Turn the heat to medium and cook the peaches for about 45 minutes. Make sure to add water if the peaches stick to the pan.
Remove from the heat and allow the peaches to completely cool at room temperature. Place them in the fridge overnight.
For the Dough:
In a mixing bowl, add salt and flour. Whisk until well incorporated.
Add the shortening and milk, then stir again until well combined. Divide the mixture into 8 parts.
Roll each dough to about a 6-inch round shape. Make sure not to tear them apart.
To Cook:
Add 2 tbsp of the cooked peaches into the middle of the prepared dough, then fold the sides turning into a half moon. Use a fork to crimp the sides.
Place a frying pan on the stove and turn the heat to medium. Add lard and allow it to melt.
Add the prepared jacks into the hot pan, then cook each side for a few minutes until they turn golden brown.
Transfer the jacks onto a clean plate lined with paper towels to drain any excess oil.
Serve right away. Enjoy!
