This was the best pie I ever tasted so far! The incredible taste of sweetness and saltiness is perfectly balanced! Allow me to share this recipe with you today. Ingredients:
75 grams of demerara sugar
75 grams melted butter
150 grams of soft brown sugar
Generous pinch of salt
150 grams butter
50 grams of desiccated coconut
150 grams double cream
150 grams of demerara sugar
250 grams Ritz crackers
3 large Eggs
2 tablespoons of skimmed milk powder
Directions:
Prepare the oven and preheat to 350 degrees F or 175 degrees C.
Apply cooking spray to a 20-cm springform cake tin.
Add 1/2 of the Ritz crackers into the food processor, then pulse a few times until they turn into crumbs.
Add sugar, coconut, and melted butter into the same food processor, then pulse again until well incorporated.
Transfer the mixture into the prepared cake tin and spread it evenly. Set aside.
Place a saucepan on the stove and turn the heat to medium. Add milk powder, cream, salt, butter, and sugars into the pan.
Stir everything until well blended.
Allow the mixture to boil. Make sure to stir constantly.
Remove the pan from the stove and allow the mixture to cool.
Add the eggs, then beat until well blended. Strain and set aside.
Scatter the remaining Ritz crackers around the pie. Place it onto a baking sheet.
Place the pie in the preheated oven and bake for about 45 minutes or until golden brown.
Remove from the oven and let it sit at room temperature to completely cool. Slice into even pieces.
