Ingredients:
2-3 sprigs of Fresh Rosemary
¼ c Chicken Stock
2 Garlic Cloves
1 tbsp butter
1 tbsp Oil
6-7 Boneless Skinless Chicken Thighs
For the Spice Rub:
¼ tsp Black Pepper
2 tbsp Light Brown Sugar
½ tsp Onion Powder
½ tsp Salt
½ tsp Smoked Paprika
½ tsp Chili Powder
1 tsp Garlic Powder
Directions:
Put all the ingredients for the spice rub into a mixing bowl. Stir everything until well combined. Use paper towels to pat dry the chicken thighs.
Sprinkle the spices over the chicken thighs, then rub each until well coated.
Place a heavy cast-iron skillet on the stove and turn the heat to medium. Add oil and butter, then allow it to become hot.
Add the garlic and sauté for about a minute or until aromatic.
Add the chicken thighs into the skillet, then sear each side for about 5 minutes until they turn golden brown.
Add 1/4 cup of the chicken stock and stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits. Stir in the rosemary sprig.
Turn the heat up to high and cover the skillet. Cook the chicken for additional two minutes.
Remove the cover and simmer for a minute. Remove from the heat.
Serve over rice or with veggies. Enjoy!
Notes:
Place leftover spices in an airtight container.
Make sure not to overcrowd the chicken in the skillet. You might want to sear them in batches.
Feel free to use paprika instead of chili powder.
