Yield: 4 Servings
The sauce alone of this Chicken Chasseur or Hunter’s Chicken is more than enough to let you know that you are in for a treat! This recipe is a must-have! You will not be disappointed at all!
Ingredients:
2 tablespoons Wondra Flour or All-Purpose Flour – optional if the sauce is not thick enough
2 Shallots Medium, chopped
1/4 c Cognac Optional
1 tablespoon Fresh Tarragon Chopped
8 ounces Mushrooms, White Button or Baby Bella, sliced
2 c Chicken Stock Or a combination of chicken and beef stock in a 2:1 ratio
8 Chicken Thighs Bone-In, Skin on
1/2 c White Wine Dry
1/2 c Chopped Tomatoes Or 2 tbsp Tomato Paste
2 tablespoons Clarified Butter or Light Cooking Oil
1 tablespoon Fresh Parsley, Chopped
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place a cast-iron skillet on the stove and turn the heat to medium-high. Add clarified butter and allow it to melt.
Sprinkle salt and pepper over the chicken to season. Place the chicken into the hot skillet, then sear each side for about 6 minutes or until they turn brown. Remove and put them onto a baking sheet.
Place the baking sheet in the preheated oven and bake the chicken thighs for about 15 to 20 minutes.
Transfer the chicken onto a clean plate. Remove most of the grease from the skillet and leave only about 2 tablespoons of it.
Add the mushrooms into the same skillet and sauté for about 5 minutes. Season with salt and pepper to taste.
Add the shallots, then sauté for a few more minutes.
Add the cognac and scrape the bottom of the skillet to get the browned bits. Add the stock and tomatoes, then stir everything until well blended. Simmer everything for 10 more minutes.
Remove from the heat, then add 2 tbsp of cold butter and allow it to melt.
Put the chicken back into the skillet, then toss until fully coated with the sauce. Garnish with freshly chopped parsley.
Serve and enjoy!
Note:
Make sure to add a bit of water and flour if the texture of the sauce becomes too thin.
