Ingredients:
2 tbsp pure maple syrup
1/3 c dried cranberries
1/2 c panko or homemade breadcrumbs
1 c peeled, chopped tart green apples
1 tsp minced rosemary
Sea salt and freshly ground pepper
1/4 c minced shallots
1 boneless pork loin (about 3 to 4 lbs.)
1/2 c chicken stock
1/3 c chopped walnuts, toasted
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Place the pork onto a flat surface, then use a sharp knife to slice it from the border working its way towards the middle. It should look like an open book.
Cover the pork with plastic, then use a meat mallet to gently pound it. Coat it well with salt and pepper.
For the Filling:
In a mixing bowl, combine the stock and Panko crumbs.
Add apples, rosemary, walnuts, maple syrup, cranberries, and shallots. Stir everything until well combined.
Add the filling on top of the pork and spread it evenly.
Roll the pork, then use kitchen strings to secure it.
Place it in the preheated oven and roast for about 15 minutes or until done.
Remove from the oven and cover it with foil to keep warm.
Let the Cranberry Apple Stuffed Pork Loin rest for at least 10 minutes before serving.
Slice into even servings.

Toast the walnuts scattered onto a baking sheet at 350 degrees F for about 7 minutes.
