Ingredients:
1/4 tsp pepper
8 ounces tomato sauce
1/2 c heavy cream
2 garlic cloves, minced
1/2 tsp salt
4 ounces of fresh spinach
4 leaves fresh basil (or use 1/4 tsp dried basil)
1 tbsp olive oil
1.5-pound chicken thighs, boneless, skinless
For Serving:
1/4 c Parmesan cheese, grated
Directions:
For the Chicken:
Place a large skillet on the stove and turn the heat to medium. Add olive oil and allow it to become hot.
Sprinkle salt and pepper over the chicken thighs, then toss until fully coated. Add them into the hot skillet, then sear each side for 5 minutes or until brown.
Place the seared chicken thighs onto a clean plate. Cover to keep them warm.
For the Sauce:
In the empty skillet, add heavy cream, tomato sauce, and minced garlic. Scrape the bottom of the skillet to get the browned bits. Stir and allow the mixture to boil.
Turn the heat down to low, then add fresh basil and spinach. Stir and cook for a few minutes. Simmer for a few minutes.
Taste and add more seasonings if needed.
Put the chicken back into the skillet, then toss until fully coated with the sauce. Adjust the heat to medium and cook everything for a few more minutes.
Remove the skillet from the heat, then sprinkle grated Parmesan cheese on top.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.
