Ingredients:
1/4 teaspoon fresh ground pepper
1/2 teaspoon salt
1/2 c butter
2 lbs. carrots, cut into 3-inch pieces
Fresh parsley
4 garlic cloves, minced
2 tablespoons honey
Directions:
Prepare the oven and preheat it to 220 degrees C or 425 degrees F.
Put an oven-safe skillet on the stove and turn the heat to medium. Add butter and allow it to melt.
Add garlic and honey, into the hot skillet, then stir until well blended.
Add the carrots, then toss until completely coated with the honey-garlic mixture. Remove from the heat.
Place the skillet in the preheated oven and roast the coated carrots for about 25 minutes.
Turn to broiler, then broil for about 4 minutes or until the glaze has caramelized.
Remove the skillet from the oven and allow the Honey Garlic Roasted Carrots to rest for a few minutes at room temperature.
Sprinkle freshly chopped parsley on top to garnish.
Serve warm and enjoy!
Notes:
You can use a baking dish for this recipe. Just make sure to sauté the carrots first in a skillet before roasting them in the oven.
Place any leftovers in an airtight container, then put them in the fridge. They can last up to 2 to 3 days. Reheat for a few minutes before serving again.
Don’t use baby carrots for this recipe. They lack flavor and we don’t want that!
Slice the carrots into even pieces.
