The combination of all the ingredients is perfectly well put which made these Mini Peach Upside Down Cakes irresistible! You are so in for a treat! This recipe can yield up to 12 mini cakes. Enjoy!
Ingredients:
1/2 tsp baking soda
1/4 tsp salt
1/2 c buttermilk
6 tsp brown sugar
1 large Egg
2 tsp pure vanilla extract
1 1/2 c flour
1 tsp baking powder
1/4 tsp cinnamon
1/3 c, plus 1 tbsp butter, softened
3 peaches (canned or frozen are ok too)
2/3 c sugar
Directions:
Prepare the oven and preheat it to 350 degrees F or 175 degrees C. Apply cooking spray to a muffin pan.
Fill each cup of the prepared muffin pan with one tbsp of butter, then top each with 1/2 tsp of brown sugar.
Thinly slice the peaches, then add 3 slices of it to the bottom of each prepared cup.
Slice the rest of the peach slices into small pieces. Set aside for later use.
For the Batter:
In a mixing bowl, add cinnamon, salt, baking soda, flour, and baking powder. Whisk everything until well incorporated.
In another mixing bowl, add sugar and 1/3 cup of butter. Beat a few times until well blended.
Add the vanilla extract and egg, then beat for about 3 minutes or until well incorporated.
Add about 1/2 of the flour mixture, then beat again for about a minute or until well combined.
Add the buttermilk, then beat for one minute. Add the rest of the flour mixture, then beat once more until mixed.
Add the reserved pieces, then tuck them in. Fill each of the prepared muffin cups with the batter.
Place the muffin pan in the preheated oven and bake the cakes for about 25 to 30 minutes or until done.
Remove the cakes from the oven and allow the cakes to rest for a few minutes.
Invert the cake pan and release the cakes from the cups.
