Ingredients:
1 medium-sized onion cut into slices
1/2 c mayonnaise
1 tbsp olive oil
3/4 c chicken broth
4 chicken parts or 2 boneless chicken breasts, cut into pieces. drumsticks or thighs or a combination
1 tbsp butter
1 red pepper seed removed and cut into slices
1 green pepper seed removed and cut into slices
salt and pepper
1/2 box penne pasta
1 heaping tbsp minced garlic jarred
Directions:
Prepare the oven and preheat it to 190 degrees C or 375 degrees F
Place a skillet on the stove and turn the heat to medium. Add 1 tbsp of butter and oil. Season the chicken with salt and pepper, then put them into the hot skillet. Sear each side for a few minutes until brown. Transfer them into a baking dish.
Place the dish in the preheated oven and bake the chicken for half an hour. Remove the dish from the oven, then cover the chicken with foil.
In the same skillet, add the bell peppers and sauté for a few minutes until soft. Add the onion and garlic, then sauté for a few more minutes until aromatic. Transfer onto a clean plate.
Refer to the directions provided on the package of pasta on how to cook it. Drain and rinse.
Put the chicken slices, cooked pasta, and sauteed veggies into the same skillet. Toss everything until well incorporated.
In a mixing bowl, add mayonnaise and chicken broth. Stir until well blended. Pour it over the pasta dish, then simmer until the texture becomes thick. Make sure to stir from time to time.
