I always make a huge batch of this white chicken chili. I don’t mind the leftovers because they can be an amazing quick meal later. You can also make this chili with leftover turkey instead of rotisserie chicken. Or a combination of both! This dish has tons of wonderful flavors, which everyone will absolutely enjoy! Serve this mouthwatering white chicken chili with some tasty cornbread for a simple, quick meal anytime! And top it off with extra cheese and sour cream for more goodness!

Ingredients
2 tablespoons dried minced onion flakes
2 tablespoons butter
2 tablespoons all-purpose flour
1 rotisserie chicken, skin removed, meat pulled off bones and chopped
1 (11-ounce) can of white corn, drained
2 (15 ounces) cans of white kidney beans, rinsed and drained
2 (4 ounces) cans of chopped green chilies, undrained
¼ teaspoon garlic powder
2 teaspoons cumin
½ teaspoon salt
1 teaspoon chili powder
½ teaspoon black pepper
2 c. shredded pepper jack cheese
3 c. chicken broth
1 c. half-and-half
HOW TO MAKE THE ULTIMATE WHITE CHICKEN CHILI
Step 1: In a Dutch oven, melt the butter, then stir in the flour. Cook for about 2 minutes, then gradually stir in the chicken broth and half of the milk. Bring the mixture to a boil and continue to cook for another 2 minutes or until thickened.
Step 2: Into the mixture, add the rest of the ingredients. Stir well and cook for an additional 10 to 15 minutes, stirring often.
