This Peach Pecan Upside Down Cake is one of my favorite upside-down cakes to serve on all occasions. Bonus because my kids love peaches! This cake is super easy and quick to make using a boxed cake mix, along with simple, easy-to-find ingredients that you might already have on hand. I made this cake using a 10-inch cast-iron skillet, but a springform pan or deep 10-inch cake pan is also great.
The combination of peaches and pecans perfectly compliments the caramel flavor of this cake. If you love upside-down cake and peaches, I am pretty sure that you’ll enjoy this cake!
Ingredients
3 large eggs
1/2 c. chopped pecans
1 c. firmly packed light brown sugar
2 to 3 large peaches
1 c. milk
1 c. butter, divided
1 tsp ground cinnamon
1 (15.25-oz.) box of yellow or butter cake mix
How to make Peach Pecan Upside Down Cake
Step 1: Prepare the oven. Preheat it to 325 degrees F.
Step 2: After peeling the peaches, slice them thinly. Arrange the peaches in the bottom of a greased 10.5-inch cast-iron skillet and sprinkle with pecans.
Step 3: Melt a half cup of butter in a small bowl. Then, whisk in the brown sugar and pour this over the peaches and pecans.
Step 4: Melt the rest of the butter. Add the melted butter to a large bowl with the cake mix, milk, eggs, and cinnamon. Stir well until blended, then pour this over the peaches and brown sugar mixture.
Step 5: Place in the preheated oven and bake for about 45 to 50 minutes or until a toothpick inserted in the middle of the cake comes out clean.
Step 6: Remove from the oven when done, and quickly cover the pan with a plate and invert.
Step 7: Serve the cake warm. If desired, top with whipped cream or a big scoop of vanilla ice cream. Enjoy!
