This Pineapple Quick Bread has tons of amazing flavors. Incredibly moist and topped with a simple glaze. It is my favorite bread to enjoy all year round! Made with just a couple of simple ingredients (vanilla, sugar, cream cheese, and cream cheese) and ready in a snap. And this recipe has a secret ingredient that you would not expect! Enjoy this tropical treat with a cup of your favorite coffee any time.
Ingredients
BREAD:
1 c. sugar
1 tsp baking soda
2 c. flour
3 ounces cream cheese, softened
3 tsp vanilla extract
1/2 c. sour cream
1 large egg, beaten
1 20-ounces can of crushed pineapple, drained (save 2-3 Tbsp of the juice for the glaze)
1 tsp salt
GLAZE:
2-3 tablespoons reserved pineapple juice
1 1/2 c. powdered sugar
How to make Pineapple Quick Bread
Step 1: Prepare the oven. Preheat it to 350 degrees. Ready a bread pan. Grease and set aside.
Step 2: Place the combined flour, baking soda, and salt together. In a separate bowl, beat egg, sugar, cream cheese, and vanilla in a medium bowl. Mix well until blended and smooth.
Step 3: Into the cream cheese mixture, add the flour mixture and mix well. Next, add the sour cream and mix until just blended. Then, add the crushed pineapple and fold.
Step 4: Into the prepared pan, pour the batter. Place in the preheated oven and bake for about 55 to 60 minutes or until a toothpick inserted in the middle of the loaf comes out clean.
Step 5: Remove from the oven when done and allow the bread to cool for about 15 to 20 minutes in the pan before inverting it on a wire rack to cool completely.
Step 6: To make the glaze, whisk the powdered sugar and pineapple juice until well combined. Then, drizzle this over the cooled bread.
Step 7: Slice and serve. Enjoy!
