This Strawberry Cream Cheese Coffee Cake is a wonderful dessert with a vanilla cake batter, classic cream cheese filling topped with juicy strawberries, and delightful cinnamon streusel. This is a heavenly and beautiful cake that is great for any occasion!
INGREDIENTS
Sugar-Cinnamon Streusel:
½ tsp ground cinnamon
⅓ c. granulated sugar
¼ c. cold unsalted butter, cut up into chunks
⅓ c. all-purpose flour
Cream Cheese Filling:
¼ c. granulated sugar
8 ounces of cream cheese at room temperature
½ tsp vanilla extract
1 large egg
optional: 1 tbsp grated lemon zest
1 tbsp all-purpose flour
Vanilla Butter Cake:
1 large egg
1 tsp baking powder
¼ c. unsalted butter at room temperature
1 c. all purpose flour
½ c. granulated sugar
⅓ c. almond milk or milk of choice
½ tsp vanilla extract
1 c. fresh strawberries, sliced
⅛ tsp salt
How to make Strawberry Cream Cheese Coffee Cake
Step 1: Prepare the oven. Preheat it to 350 degrees F. Grease a 9-inch spring form using butter and set aside.
Cinnamon Streusel:
Step 2: In a medium bowl, place the flour, sugar, and ground cinnamon. Mix well until combined.
Step 3: Using a pastry blender or fork, cut in the butter until you have a mixture that resembles coarse crumbs. Set aside.
Cream Cheese Filling:
Step 4: Beat the cream cheese using a mixer until smooth and creamy. Then, add the sugar along with egg, vanilla extract, lemon zest, and flour. Beat until you have a very smooth mixture. Set aside.
White Butter Cake:
Step 5: Place the flour, baking powder, and salt in a medium bowl. Mix well and set aside.
Step 6: Cream the butter using a mixer. Add the sugar and mix again until light and fluffy. Next, add the egg along with the vanilla extract. Continue mixing until everything is well blended.
Step 7: Alternately add the flour mixture and milk, beating until just combined.
To Assemble:
Step 8: Onto the bottom and a little up the sides of the pan, spread the cake batter. On top, spread the cream cheese filling and randomly sprinkle the strawberries and streusel over.
Step 9: Place in the preheated oven and bake for about 60 to 70 minutes or until a toothpick inserted in the middle of the cake comes out clean and the streusel is golden brown.
Step 10: Take the cake out of the oven when done and place it on a wire rack to cool.
