I love this shortcut version of the classic Chile Relleno. This recipe makes life easier, yet delivers the same great results. This delicious casserole with layers of peppers, baked eggs, and melty cheese is an amazing breakfast, lunch, and dinner option!
Ingredients
4 Egg Whites
Poblano Peppers, about 5 or 6
1 c. Milk
1/3 c. Flour
6 oz. Pepper Jack
6 oz. Cheddar
Tomato Sauce, 1 medium can (I only had a big 26-ounce can so I used about half)
Cumin
1 tbsp Cocoa Powder
Oregano
Chili Powder
How to make Easy Chiles Rellenos Casserole
Step 1: Prepare the oven. Preheat it to 450 degrees. Generously grease a 1 1/2 quart casserole dish using nonstick cooking spray.
Step 2: After rinsing the peppers, slice them in half, then remove the stems and seeds. On a baking sheet, place the peppers skin-side-up. Place in the broiler for approximately 10 minutes or until the peppers just start to become tender and brown.
Step 3: In a small bowl, place the egg whites, milk, and flour. Mix well until completely blended. Then, pour this into the prepared dish.
Step 4: Mix the tomato sauce, cocoa powder, and 1 tsp or so of the other spices until well combined. Cook until heated through. Then, grate the cheese and keep it aside (approximately half c. of each for the topping).
Step 5: Take the peppers out of the oven and set the oven to bake at 350 degrees.
Step 6: In the casserole dish, arrange the peppers in a single layer, ensuring that they are coated well with the egg mixture. On top, sprinkle the rest of the cheeses. Add another layer of peppers, making sure to spoon the egg mixture over the peppers. On top, pour the sauce and sprinkle with the reserved cheese.
Step 7: Place in the preheated oven and bake for about 1 hour or until the casserole is bubbly and the egg mixture is set.
Step 8: Remove the casserole from the oven and allow it to sit for about 10 minutes before slicing. Serve hot. Enjoy!
