Chicken Taquitos are my favorite! My go-to appetizer and a great dinner option. These delicious homemade taquitos are stuffed with chicken and cheese. To serve, top them with your favorite toppings, such as shredded lettuce, sour cream, guacamole, and more!
Ingredients
Taquitos:
20 corn tortillas
2 c. shredded chicken, we use rotisserie chicken
1/2 tsp ground cumin
1/2 tsp ground chili powder
1/4 tsp paprika
1/4 tsp garlic powder
2 tsp fresh lime juice
1/2 tsp kosher salt
1 c. shredded cheddar or Mexican blend cheese
Toppings:
Diced tomatoes
Shredded lettuce
Guacamole
Salsa
Sour Cream
Pico de Gallo
Chopped Green Onion
Crumbled Queso Fresco
How to make Chicken Taquitos
Step 1: Prepare the oven. Preheat it to 425 degrees F. Using nonstick cooking spray, grease a large baking sheet. Set aside.
Step 2: Place the shredded chicken, cumin, chili powder, salt, garlic powder, paprika, and fresh lime juice in a medium bowl. Mix well until combined, then whisk in the shredded cheese.
Step 3: Between the paper towels, place two tortillas at a time. Microwave for about 20 to 30 seconds, then rolls up the taquitos.
Step 4: In the middle of the tortilla, place a heaping tablespoon of the chicken and cheese mixture. Tightly roll the tortilla and place the taquito on the prepared baking sheet, seam-side down. Repeat with the remaining tortillas and filling. When done, you should have around 20 taquitos.
Step 5: Generously spray the taquitos with nonstick cooking spray. Place in the preheated oven and bake for about 15 to 20 minutes or until crispy and golden brown.
Step 6: Take the baking dish out of the oven when done and serve the Chicken Taquitos right away with your favorite toppings. Enjoy!
Notes:
In an airtight container, keep any leftovers and store them in the fridge for up to 4 days. These chicken taquitos are also freezer-friendly.
