Peanut Butter Cup Stuffed Brookies are an addictive treat made with just three simple ingredients; Reese’s Peanut Butter Cups, refrigerated cookie dough, and brownie mix. The vanilla ice cream is optional but recommended. These brookies are one of the best treats you’ll ever make! These brookies are like a fancy version of lava cake or mini pizookie. Serve these brookies warm topped with a big scoop of ice cream or whipped cream!
Whenever someone asks me, what is the best dessert. There is only one that pops into my mind. Peanut Butter Cup Stuffed Brookies! A sweet, heavenly treat that is incredibly fun to make!
Ingredients
12 Reese’s Peanut Butter Cups
1 (16 ounces) package of refrigerated cookie dough
vanilla ice cream (optional)
1 (10 ounces) bag of brownie mix (plus the oil & egg to make the batter)
How to make Peanut Butter Cup Stuffed Brookies
Step 1: Prepare the oven. Preheat it to 350 degrees. Ready a regular-size muffin tin. Grease and set aside.
Step 2: Following the package directions, prepare the brownie mix and set it aside.
Step 3: Into 12 even balls, separate the cookie dough. Into the bottom of each muffin cup, squish the cookie dough. On top, place Reese’s peanut butter cup upside down.
Step 4: Over each peanut butter cup, evenly distribute the brownie batter, filling each well to about 90% full.
Step 5: Place in the preheated oven and bake for about 18 to 20 minutes or until the brownie batter is completely cooked.
Step 6: Remove from the oven when done and let the brookies cool for approximately 5 minutes before taking them out of the pan.
Step 7: Serve the peanut butter cup stuffed brookies warm with a scoop of vanilla ice cream. Enjoy!
Notes:
To reheat the brookies, pop them in the microwave for about 30 seconds.
Instead of a peanut butter cup, use Oreo or a couple of caramels.
