This Creamy Cajun Shrimp Pasta with Sausage is a scrumptious Cajun recipe. You can whip it up in less than an hour. Serve this savory, restaurant-quality dish any time with this easy recipe!
Ingredients
2 tbsp Olive oil
2-3 cloves garlic, (chopped)
1 pound large shrimp, (peeled and deveined)
6 ounces andouille sausage or smoked sausage, (thinly sliced)
½ yellow onion, (thinly sliced)
10 oz. fettuccine pasta
⅔ c. Grated Parmesan
1 red bell pepper, (thinly sliced)
4 tsp Cajun seasoning, (or Creole seasoning)
1 tsp brown sugar
1 c. chicken broth, sodium free
½ c. crushed tomatoes
1 c. heavy cream
1 tbsp parsley, (chopped)
1 tsp Cajun seasoning, (or Creole seasoning)
½ tsp dried Oregano
Kosher salt and fresh cracked black pepper, (to taste)
How to make Creamy Cajun Shrimp Pasta with Sausage
Step 1: Toss and coat the shrimp with salt, pepper, Cajun seasoning, and Oregano. On medium-high, heat a large skillet. Then, drizzle the bottom of the pan with olive oil.
Step 2: To the hot oil, add the shrimp and cook for about 2 minutes. Flip and continue to cook the other side for another 1 to 2 minutes. Set the shrimp aside when done.
Step 3: Into the pan, drizzle a bit more oil. Add the sausage and cook for about 4 to 5 minutes until brown and caramelized. Transfer the sausage to a plate and set aside.
Step 4: Following the package directions, cook the pasta in a pot with salted boiling water until al dente.
Step 5: Adjust the heat to medium and drizzle a little more oil into the same pan. Then, add the onion along with the red bell pepper, Cajun seasoning, brown sugar, and a generous pinch of salt. Saute until the onion and pepper are slightly tender, scraping the browned bits on the bottom of the pan. Next, add the garlic and continue to cook for another 30 seconds until aromatic.
Step 6: Into the pan, add the crushed tomatoes and pour in the chicken broth and heavy cream. Bring everything to a simmer and simmer for a few minutes, stirring and scrapping any browned bits from the bottom of the pan.
Step 7: Add the Parmesan once the mixture is simmering and stir the cheese into the sauce. Next, add the cooked pasta along with the sausage. Toss well and cook for another 2 to 3 minutes until heated through. To taste, season with salt and pepper. Then, add the shrimp.
Step 8: Remove from the heat when done and serve the Creamy Cajun Shrimp Pasta with Sausage right away garnished with some chopped parsley. Enjoy!
