These are the perfect little breakfast muffins! These breakfast muffins have all my favorite breakfast staples; ham, egg, cheese, and hash brown. This begins with a hash brown “basket”. Pre-bake them, then stuffed them with ham, egg, and cheese mixture. These are excellent grab-and-go breakfast perfect for busy mornings.
To make these breakfast muffins, all you need are just a couple of simple ingredients. The steps are super easy, too. My kids love these breakfast muffins! Not only that these are wonderful on-the-go breakfasts, but also perfect to add to their lunch boxes!
Ingredients
5 eggs
About 2 1/2 c. hash browns frozen or refrigerated
2 tablespoons heavy whipping cream
Salt
1 c. of shredded sharp Cheddar cheese
1 teaspoon garlic powder
Salt
Fresh cracked black pepper
1/4 pound ham diced
How to make Ham Egg and Cheese Hash Brown Breakfast Muffins
Step 1: Prepare the oven. Preheat it to 425 degrees. Ready a 6-cup muffin pan. Grease and set aside.
Step 2: Among the muffin cups, divide the hash browns, pressing them in and shaping them into some kind of a cup at the bottom and up the sides. The portions should measure about 1/4 -1/3 c. of hash browns.
Step 3: Season the hash browns with some salt, then pre-bake for about 15 to 17 minutes or until it begins to get slightly crispy and golden.
Step 4: Remove the hash browns from the oven and adjust the oven temperature to 350 degrees.
Step 5: Place the eggs, heavy cream, salt, garlic powder, and pepper in a mixing bowl. Mix well until smooth. Then, add the shredded cheese along with the diced ham. Mix well.
Step 6: Into each hash brown cup, spoon the egg mixture, filling each cup almost all the way.
Step 7: Return to the oven and resume baking for about 15 to 18 minutes.
