These breakfast burritos are my favorite and go-to breakfast burrito. Freeze-friendly and the best breakfast to start the day right! These crisp burritos are stuffed with tender scrambled eggs, ham, fresh tomatoes, and cheese. Super simple to make and very versatile.
Ingredients
6 large eggs
6 medium flour tortillas, (8” diameter)
1 tablespoon unsalted butter
1/2 c. sour cream, divided (2 tablespoons for eggs & 1 tablespoon per tortilla)
2 ounces deli ham, cut into strips or squares, optional
4 ounces mozzarella cheese, (1 c. shredded)
1/2 pound button mushrooms, (8 medium), thinly sliced – optional
3 tablespoons olive oil, to saute (add more as needed)
1 tomato, diced – optional
1/4 teaspoon sea salt, (or to taste)
1/8 teaspoon black pepper, (or to taste)
How to make Breakfast Burritos (Freezer Friendly)
Breakfast Burrito Filling:
Step 1: Place 6 eggs in a medium bowl. Add 2 tbsp sour cream and season with salt and pepper. Mix well until combined. Then, add the strips of ham and mix. Set aside.
Step 2: Heat 1 tbsp oil in a large skillet over medium heat. Once hot, add the sliced mushrooms and saute for about 5 minutes until golden, stirring often. Lightly season with salt and pepper. Set the mushrooms aside when done.
Step 3: Melt 1 tbsp butter in the same skillet over medium heat. Once melted, add the egg mixture and scramble for about 3 minutes until the eggs are just cooked through. Make sure not to overcook the eggs. Set aside.
To Assemble:
Step 4: In the center of a tortilla, spread 1 tbsp sour cream and top with 1/6 of the cooked eggs followed by the shredded mozzarella cheese and sauteed mushrooms. On top, add 1 to 2 tbsp diced tomatoes (optional).
Step 5: From top to bottom, roll the burrito, wrapping the filling tightly. Then, fold the edges and roll to seal with the bottom flap. Do the same with the remaining burritos.
To Heat the Burritos:
Step 6: Add 2 tbsp oil in a hot large skillet over medium heat. In the hot pan, place the fresh or thawed burritos, folded-side-down. Cook for about 2 minutes on each side until golden brown. As needed, add more oil.
Note:
If planning to freeze the burritos, skip the tomatoes.
