These cookies are a delicious marriage of two delicious treats: brownies and buckeyes. Enjoy the flavor of buckeyes without the hassle of dipping them in chocolate with this simple cookie recipe!
Does anyone here have a soft spot for buckeyes, brownies, and cookies? I’m sure I do. One of my favorite sweets is brownies because of their rich chocolate taste and dense texture.
To be honest, I have quite a few favorites. On the other hand, I find brownies to be quite delicious. In that case, turning it into a giant, decadent, ooey-gooey cookie with peanut butter surprises within is just too much for me to handle. Cookies with the flavor of buckeyes and brownies. I could not ask for more!
Ingredients
1/4 c. butter, melted
1 box fudge brownie mix (19.5 oz. or family size)
4 oz. cream cheese, softened
1 large egg
4 oz. semi-sweet chocolate chips
1 c. powdered sugar
1 c. creamy peanut butter
How to make Buckeye Brownie Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Place the brownie mix, butter, cream cheese, and egg in a medium bowl. Beat until the dough is a bit sticky.
Step 3: Onto an ungreased cookie sheet, scoop the dough to make approximately 24 cookies. Then, smooth the edges of each dough to make a round cookie.
Step 4: Combine the powdered sugar and peanut butter in another bowl. Mix well until blended. Into 1-inch balls, shape the mixture, making sure you have 1 ball for each cookie. Then, set aside.
Step 5: Place in the preheated oven and bake the cookie dough for about 12 minutes.
Step 6: Lightly press a peanut butter ball on the center of each cookie as soon as the cookies come out of the oven. Allow cooling for about 5 minutes, before inverting the cookies to a wire rack to cool fully.
Step 7: In a microwavable bowl, melt 4 oz. Of chocolate for 3 seconds. Stir, then melt for another 15 seconds until the chocolate is fully melted.
Step 8: On top of each cookie, spoon about half a tbsp of melted chocolate to cover the peanut butter ball. Allow the chocolate to set.
Step 9: In an airtight container, keep the cookies.
