Penuche, often known as “brown sugar fudge,” gets its name from the fact that, unlike traditional fudge recipes, penuche asks for not just brown sugar, but also either granulated sugar and powdered sugar or brown sugar and granulated sugar. However, this name is a bit of a misnomer, as penuche is more accurately described as candy than fudge. It’s easier to call this fudge because it tastes like fudge and is as irresistible!
INGREDIENTS
1 c. pecans or walnuts, roughly chopped
2 c. brown sugar
3 c. powdered sugar, sifted
1 c. (2 sticks) unsalted butter
1 (5 ounces) can evaporated milk
non-stick spray, as needed
1 tsp vanilla extract
1/4 tsp salt
How to make Easy Penuche Fudge
Step 1: Using a non-stick spray, grease a 9 x 5-inch loaf pan, then line it with plastic wrap or parchment paper.
Step 2: In a heavy-bottomed saucepan over medium-low heat, mix the butter and brown sugar. Heat for about 2 to 3 minutes or until the butter has melted and the sugar has dissolved.
Step 3: Add the evaporated milk and bring everything to a boil. Once boiling, take the pan off the heat and allow the mixture to cool for about 30 minutes.
Step 4: Next, add the vanilla extract and salt. Stir well until mixed. Then, slowly beat in the powdered sugar.
Step 5: Fold in the chopped nuts once the sugar is blended.
Step 6: To the prepared loaf pan, transfer the mixture. Place in the fridge to chill for about 20 to 25 minutes, uncovered.
Step 7: Once set, slice and serve. Enjoy!
