INGREDIENTS
1 1/2 c. whole milk
1 1/2 c. heavy cream
1/3 c. all-purpose flour
1 (16 ounces) package of store-bought puff pastry, 2 sheets, thawed
1/2 c. water
2/3 c. caster sugar, or superfine sugar
1/4 c. (1/2 stick) unsalted butter, cubed
powdered sugar, as needed
6 egg yolks, beaten
2 tsp vanilla extract
How to make These Classic Vanilla Custard Bars
Prepare the oven and preheat it to 350 degrees. Using parchment paper, line two baking sheets. Then, line a 9 x 13-inch baking dish using parchment paper, leaving both sides with a 2-inch overhang.
After unrolling the pastry sheets, line them onto the lined baking sheets. Gently prick using a fork. Be careful not to pierce the bottom.
Optional: You can place another parchment paper on top of each puff pastry sheet. Then, lay another baking sheet on top, acting as a weight. This way the puff pastry won’t inflate.
Bake for about 20 to 22 minutes or until golden brown. Once done, allow to cool fully.
Optional: Trim the edges of the puff pastry using a serrated knife so it fits into the baking dish. Then, lay one sheet of puff pastry.
Whisk the milk, cream, butter, vanilla, and sugar in a medium saucepan over medium heat and cook until just small bubbles appear around the edges of the pan.
To make the slurry, combine the flour and water, then stir this into the hot milk mixture. Take the pan off the heat.
To temper, the yolks, stir a bit of hot milk mixture into the beaten egg yolks. Whisk this into the mixture while the pan is still off the heat.
Place the pan on the stove and bring the mixture to a boil. Cook for about 30 to 60 seconds while stirring until the custard has thickened.
Over the puff pastry, pour the thickened custard and lay the second puff pastry sheet on top. To fit the dish, trim the edges. So the pastry adheres, gently press it down.
Place in the fridge for 3 to 4 hours until the custard is set.
Dust with powdered sugar, slice and serve the bars. Enjoy!
