1 c. water
1 c. Minute Rice
1 c. vegetables, fresh or frozen, type of your choice
1 large egg
2 tbsp soy sauce, ideally low-sodium
1 tbsp fresh garlic, minced
1 pinch black pepper, to taste
1 pinch salt, to taste
HOW TO MAKE 10-MINUTE SIMPLE EGG FRIED RICE
Step 1: Bring the water and soy sauce to a boil in a saucepan over medium heat. Pour the uncooked rice once the water is bubbling. Put the lid on and cook for about 5 minutes (or per package instructions).
Step 2: In a skillet, heat the vegetable oil over medium heat. Once hot, add the garlic, vegetables, and season with salt & pepper. Cook for about 3 to 5 minutes or until the garlic starts to turn golden brown, stirring often.
Step 3: Into the skillet, directly crack the egg. Scramble the egg with the garlic and veggies. Cook for about 2 to 3 minutes. Once the egg is cooked, add the cooked rice.
Step 4: Stir well and cook until any excess water from the rice has evaporated. This takes about another 2 to 3 minutes.
Step 5: Serve the egg-fried rice right away. Enjoy!
