These chocolate crinkle cookies are my favorite! They are always a part of our holiday dessert menu. They are seriously fudgy, very chocolatey almost like a brownie cookie! Keep them for up to a week in an airtight container on the counter. You can even freeze the dough balls overnight. The next day before baking, allow them to thaw, then roll them in powdered sugar.
Ingredients
1 stick unsalted butter, 1/2 c.
1 ⅔ c. all-purpose flour
2 teaspoons baking powder
⅓ c. unsweetened natural cocoa powder
½ teaspoon salt
4 ounces of unsweetened chocolate
Powdered sugar for rolling the cookies, about 1 c.
4 large eggs
1 ½ c. granulated sugar
How to make Chocolate Crinkle Cookies
Step 1: Place the flour, cocoa powder, baking powder, and salt in a small mixing bowl. Mix well until blended and set aside.
Step 2: Melt the butter and unsweetened chocolate in a small pot over medium-low heat, stirring often until melted. Once melted, take off the heat.
Step 3: Whisk the eggs and sugar in a large mixing bowl. Add the melted chocolate mixture and mix well. Next, slowly add the flour mixture and mix well until just blended.
Step 4: Using plastic wrap, cover the bowl and place the dough in the fridge for at least 2 hours or overnight.
Step 5: Prepare the oven. Preheat it to 350 degrees F. Using a silicone baking mat or parchment paper, line a baking sheet. Into a bowl, place about 1 c. powdered sugar.
Step 6: Scoop the dough using a small cookie scoop and shape it into a ball. In a generous amount of powdered sugar, roll and coat the ball. Repeat the process. On the prepared baking sheet, place the cookies around 2 inches apart.
Step 7: Place in the preheated oven and bake for about 16 to 20 minutes.
Step 8: Remove from the oven when done and let the cookies cool on the pan before serving, Enjoy!
