Melt-in-your-mouth moist spiced pumpkin muffins topped with sweet cream cheese. These delightful muffins are ready to serve in just thirty minutes! One bite, and you’ll fall deep for these muffins!
Ingredients
Muffin:
2 large eggs
1 3/4 c. all-purpose flour
1 c. granulated sugar
1 tbsp pumpkin spice
1 (15-ounce) can of pumpkin (pure pumpkin puree)
1/2 c. packed brown sugar
1 tsp baking soda
1/2 tsp salt
1 tbsp vanilla extract
1/2 c. vegetable oil
Cream Cheese Swirl:
1/4 c. granulated sugar
8 ounces of cream cheese
2 tsp vanilla extract
1 large egg yolk
How to make Pumpkin Cream Cheese Swirl Muffins
Step 1: Prepare the oven. Preheat it to 375 degrees F. Into muffin pans, place the paper baking cups and set aside.
Step 2: Place the flour, pumpkin spice, baking soda, and salt in a medium bowl. Mix well until blended and set aside.
Step 3: Combine the pumpkin, sugar, and brown sugar in a large bowl. Add the eggs, vegetable oil, and vanilla extract. Mix well until combined. Then, gradually stir in the flour mixture until the lumps are gone.
Step 4: With the batter, fill the muffin tins 3/4 full.
Step 5: Beat the cream cheese in a medium bowl until smooth. Add the sugar along with the egg yolk and vanilla extract. Beat well until the ingredients are well incorporated.
Step 6: On top of each muffin, place about 1 tbsp of the cream cheese mixture and swirl into the batter using a toothpick.
Step 7: Place in the preheated oven and bake for about 18 to 20 minutes or until a toothpick inserted in the middle of the muffin comes out clean.
Step 8: Remove from the oven when done and allow the muffins to cool at room temperature or chill before serving. Store the muffins in the fridge in an airtight container.
