Comforting and healthy. This easy, quick, and low-calorie soup has been one of my favorite go-tos’s for busy weeknights.
I enjoy making soups. They are the easiest to throw together. This easy and comforting ham and potato soup is filled with veggies and cooked honey ham. Stir in the milk and roux to make it creamy and delicious.
This soup is the best healthy soup I have ever made! This is a must-try and one to keep!
Ingredients
5 tbsp butter
1/2 c. onion, diced small
1 1/2 c. (9 ounces) cooked honey ham, diced medium
1/2 c. celery, diced small
4 c. (2 15-ounce cans) chicken broth
2 c. milk, (any percentage)
1/4 c. and 1 tbsp (44 grams) all-purpose flour
1/4 tsp black pepper
Salt
3 1/2 c. (about 2 large) russet potatoes, peeled and diced medium
How to make Easy and Comforting Ham and Potato Soup
Step 1: Place the potatoes, ham, celery, onions, and chicken broth in a large bowl. Mix well and bring everything to a low boil. Then, cook for about 10 to 15 minutes over medium heat until the veggies are fork-tender.
Step 2: To make the roux, melt the butter in a medium saucepan over medium heat. Once the butter has melted, stir in the flour. Cook for about a minute, stirring constantly until the flour is golden. Next, gradually add the milk while stirring to remove the lumps. Continue to cook the mixture for another 5 minutes until the roux has thickened.
Step 3: Into the soup, stir in the flour and milk mixture. To taste, season with salt and pepper.
Step 4: Ladle the soup into servings bowls and serve right away. Enjoy!
Note:
For this recipe, you can use regular cooked ham if you do not so much care about honey ham.
