Air fryer recipes are my newest obsession. I have tried many air fryer recipes, and this Air Fryer Cajun Shrimp Dinner is on top of my list. This is a meal-in-one made with shrimp, sausage, and tons of colorful veggies like yellow squash, zucchini, and bell peppers. This is packed with amazing flavors and colors. And this Air Fryer Cajun Shrimp Dinner takes just a couple of minutes to make.
This dish not only is exploding with flavors, but is also pleasing to the eyes. You can try this with broccoli florets, eggplants, etc. For a complete meal, serve this Air Fryer Cajun Shrimp Dinner over hot steamed rice.
Ingredients
2 tbsp olive oil
24 (1 lb.) cleaned and peeled, extra jumbo shrimp
1 tbsp Cajun or Creole seasoning
6 oz. fully cooked Turkey/Chicken, Andouille sausage or kielbasa, sliced
1 large red bell pepper, seeded and cut into thin 1-inch pieces
1 medium zucchini, 8 ounces, sliced into 1/4-inch thick half moons
1/4 tsp kosher salt
1 medium yellow squash, 8 oz., sliced into 1/4-inch thick half moons
How to make Air Fryer Cajun Shrimp Dinner
Step 1: Place the Cajun seasoning and shrimp in a large bowl. Toss well to coat.
Step 2: To the bowl, add the sausage along with the zucchini, squash, bell peppers, and salt. Toss with the oil.
Step 3: Prepare the air fryer and preheat it to 400 degrees F.
Step 4: Transfer the shrimp and veggies (in 2 batches) to the fryer basket. Set to cook for 8 minutes, shaking the air fryer basket 2 to 3 times. Do the same for the remaining shrimp and veggies.
Step 5: To the air fryer, return the first batch once both batches are cooked, then cook for a minute.
Notes:
I recommend buying frozen shrimp and just defrost them as needed. Thaw the shrimp in the fridge to defrost.
Make sure to check the package label for whole30 and gluten-free.
