Ingredients:
CINNAMON SUGAR TORTILLA SHELLS:
Oil for frying
6 Large Flour tortillas
1½ tsp Cinnamon
½ c Brown sugar
CREAM CHEESE FILLING:
1 tsp Vanilla extract
¼ c Powdered sugar
8 ounces Cream cheese
1 c Heavy cream
HOMEMADE APPLE PIE FILLING:
½ teaspoon cinnamon
⅛ teaspoon nutmeg
½ teaspoon vanilla extract
2 large Apples, diced
1 c water
⅓ c brown sugar
⅛ c cornstarch
Directions:
For the Cinnamon Sugar Tortilla Shells:
1. In a mixing bowl, add cinnamon and brown. Whisk until well incorporated.
2. Use a 3.5-inch circle cutter to cut the tortillas.
3. Place a pan on the stove and turn the heat to medium.
4. Add 1-inch of oil and allow it to become hot.
5. Add the tortilla circles into the hot pan, then fry each side for about 15 seconds or until golden brown.
6. Transfer the tortillas onto a clean plate lined with paper towels.
7. Add the tortilla circles into the bowl with the sugar mixture, then toss until well coated. Repeat the process with the rest and arrange them upside down into a muffin tin.
For the Homemade Apple Pie Filling:
1. Add nutmeg, water, brown sugar, cornstarch, and cinnamon into a dish. Stir everything until well blended.
2. Put it on the stove and turn the heat to medium. Stir and cook for about 3 minutes or until thick.
3. Add the vanilla extract and apples into the filling, then stir and cook for 10 more minutes. Remove the pan from the heat.
For the Cheesecake Filling:
1. In a medium mixing bowl, add heavy cream, vanilla extract, cream cheese, and powdered sugar. Whisk until well incorporated. Transfer into a piping bag.
2. Fill each shell and top with the apple pie filling.
3. Serve and enjoy!
